Ingredients

Baby red potatoes
Red peppers
Green onion
Grape tomatoes
Kernel corn
Chorizo sausage
Roasted red pepper sauce
Per serving

In one pan sear a handful of each of the following vegetables and sliced sausage in a bit of oil, adding some roasted red pepper sauce towards the end.

In a separate pan sear 5-7 fresh Digby scallops.

When sausage mixture is cooked, empty that pan onto a large plate. Place seared scallops on top and around plate. Top with fresh micro greens for decoration.
